Embracing the Unexpected: Designing with Marsala, Pantone’s Color of the Year

As the new year dawned, I found myself drawn to the idea of celebrating with something truly unconventional. Instead of adhering to the traditional winter-inspired palette often expected at this time of year, I decided to bravely embrace Marsala – Pantone’s highly anticipated Color of the Year. This rich, earthy red-brown hue, reminiscent of a sophisticated fortified wine, presented an exciting yet challenging opportunity to push the boundaries of conventional cake design.

The Design Challenge: Marsala for Wedding Cakes

Truth be told, Pantone’s annual Color of the Year selections sometimes leave me a little bewildered. While their choices often make a powerful statement in couture fashion or interior design, translating them into elegant, celebratory cake art can be a whole different story. Marsala, with its deep, robust character, posed a particular conundrum. The primary challenge for this cake was to craft a design that maintained a sense of lightness, romance, and femininity – making it entirely wedding-appropriate – despite working with a color that naturally reads as quite heavy and dramatic.

From the outset, I knew that a cake entirely covered in Marsala-colored fondant would visually weigh down the entire confection, stripping away the desired ethereal quality. Innovative Techniques: The Golden Touch

For the delicate gold ribbon details gracing the tiers of the cake, we employed a truly unconventional yet highly effective technique. Instead of relying on a traditional paintbrush, which often struggles to achieve consistently fine and crisp lines, we experimented with a different approach. We mixed gold luster dust with vodka to create a vibrant, paintable metallic solution. The real innovation came in the application: we sharpened a ¼-inch wooden dowel to a precise point, then dipped this customized “pen” into the gold mixture. This allowed us to essentially write or draw directly onto the fondant with unparalleled precision and control.

This method was born partly out of creative desperation, as none of my existing paintbrushes were fine enough, and those that were, were fraying, producing unsatisfactory results. However, this resourceful improvisation proved incredibly successful, yielding perfectly crisp, unbroken gold lines that shimmered beautifully against the white fondant. The precision achieved with the sharpened dowel simply couldn’t have been replicated with a standard brush, and the result was a striking, luxurious detail that added immense value to the design. Each bow was then carefully cut, shaped to give it a lifelike curve and movement, and allowed to dry completely. This drying process is crucial for maintaining their delicate form and preventing them from collapsing once attached to the cake.

To further enhance the visual appeal and imbue the bows with a sense of dynamic movement, we applied two generous coats of confectioners glaze. This glossy finish not only added a beautiful sheen but also deepened the Marsala color, creating a more complex and interesting visual texture that would not have been possible with matte fondant alone. The subtle reflection and enhanced depth made the bows appear more luxurious and dynamic, almost as if they were made of real silk ribbon. To securely attach these delicate decorative elements to the cake, we first applied a small dab of fresh Marsala-colored fondant to the back of each bow, using it as a flexible adhesive. Then, more piping gel was used to adhere the bows firmly to the white fondant surface, ensuring they stayed perfectly in place throughout the event. This multi-step process guaranteed both aesthetic appeal and structural integrity for these intricate details.
