GODIVA HAZELNUT CRUNCH CUPCAKES

For the Chocolate Cupcake Base

This classic chocolate cupcake provides a rich, moist foundation for all the decadent layers to come.

  • 3/4 cup all-purpose flour
  • 3/4 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, at room temperature
  • 1 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  1. Preheat your oven to 350°F (175°C). Line a standard 12-cup cupcake tin with paper liners.
  2. In a medium bowl, sift together the flour, cocoa powder, baking powder, and salt. Set this dry mixture aside.
  3. In the bowl of a stand mixer fitted with the paddle attachment, beat the softened unsalted butter and granulated sugar on medium-high speed. Cream until the mixture is visibly pale and wonderfully fluffy, which typically takes about 5 minutes.
  4. With the mixer on low speed, add the eggs one at a time, ensuring each egg is fully incorporated before adding the next. Once all eggs are in, mix in the vanilla extract.
  5. Gradually add one third of your reserved dry ingredients to the butter mixture and mix gently until just combined.
  6. Next, add one half of your sour cream and mix until smooth. Alternate adding the remaining dry ingredients and sour cream (dry, wet, dry), mixing gently after each addition. Be careful not to overmix the batter, as this can lead to tough cupcakes.
  7. Divide the prepared cupcake batter evenly among the 12 lined cupcake cups. Bake for 20-25 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Allow to cool completely on a wire rack before assembling.

For the Dark Chocolate Ganache

This rich, glossy ganache will add an intense chocolate flavor and serve as the perfect adhesive for the toasted hazelnuts.

  • 4.5 ounces Godiva Dark Chocolate
  • 1/2 cup heavy cream
  • 1 1/2 teaspoons light corn syrup

Begin by finely chopping the Godiva Dark Chocolate into small, uniform pieces. Place the chopped chocolate into a medium, heatproof bowl and set it aside. In a small saucepan, heat the heavy cream over medium-high heat until it just begins to simmer around the edges. Immediately remove the cream from the heat and pour it directly over the chopped chocolate. Let the mixture sit undisturbed for about 5 minutes, allowing the hot cream to melt the chocolate. After 5 minutes, gently stir the mixture with a wooden spoon or spatula until the chocolate is completely melted and the ganache is smooth, glossy, and emulsified. Finally, stir in the light corn syrup until well combined; this adds shine and helps prevent crystallization.

For the Milk Chocolate Swiss Meringue Buttercream Frosting

This light, silky buttercream infused with milk chocolate is a dream to work with and tastes divine.

  • 2 cups unsalted butter, at room temperature
  • 5 egg whites, at room temperature
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons vanilla extract
  • 6 ounces Godiva Milk Chocolate, melted and cooled
  1. In the bowl of your stand mixer (or a large heatproof bowl), combine the egg whites, granulated sugar, and salt. Place this bowl over a saucepan of simmering water, ensuring the bottom of the bowl does not touch the water. Whisk continuously until the mixture reaches 160°F (71°C) on a candy thermometer and all the sugar crystals have completely dissolved (the mixture should feel perfectly smooth when rubbed between your fingers).
  2. Remove the bowl from the heat and attach it to your stand mixer, fitted with the whisk attachment. Starting on low speed, gradually increase to medium-high speed. Whisk the meringue until stiff, glossy peaks form and the mixture is fluffy and voluminous. Continue whisking until the bowl is no longer warm to the touch – this typically takes about 10 minutes.
  3. With the mixer still running on medium speed, begin adding the softened unsalted butter, a few tablespoons at a time. Mix thoroughly after each addition. The mixture may look curdled or separated at first; this is normal. Continue mixing until the icing transforms into a wonderfully smooth, silky, and stable buttercream, which can take anywhere from 10 to 15 minutes. Patience is key here!
  4. Finally, add the vanilla extract and the cooled, melted Godiva Milk Chocolate. Mix until everything is perfectly combined and the buttercream is uniformly chocolatey and smooth.

To Assemble the Decadent Cupcakes

Bringing all these delicious elements together for a truly show-stopping treat.

  • 2/3 cup hazelnuts, chopped and lightly toasted
  • Godiva Hazelnut Crunch Truffles

Pour the chopped and lightly toasted hazelnuts into a small, shallow bowl. Take each cooled chocolate cupcake and carefully dip the very top into the prepared dark chocolate ganache, allowing any excess to drip off. Gently roll the ganache-dipped cupcake in the chopped hazelnuts, covering the exterior edge of the ganache but leaving the center uncoated for the frosting. Using a pastry bag fitted with a #825 star tip (or your preferred decorative tip), swirl a generous mound of the milk chocolate Swiss meringue buttercream frosting onto the center of each cupcake. For best results and stability, pop the frosted cupcakes into the refrigerator for about 10 minutes, or until the buttercream is slightly firm. Once chilled, drizzle more dark chocolate ganache over the frosting, creating an appealing swirl. To complete this masterpiece, perch a whole Godiva Hazelnut Crunch Truffle elegantly on top of each cupcake. Store the finished cupcakes in the refrigerator until you are ready to serve them. For the most exquisite flavor and texture, allow them to come to room temperature for about 15-20 minutes before enjoying.
