Embracing Autumn Flavors: The Ultimate Guide to Delicious Baked Apple Donuts
There’s an undeniable magic to this time of year, a certain nostalgia that settles in with the changing seasons. I find myself yearning for the crisp chill in the air, the symphony of leaves turning vibrant shades of gold and crimson, and the comforting scent of apples and pumpkins at their peak. Living in Florida, however, means most days are a glorious 85 degrees, filled with bright sunshine and swaying palm trees. While I certainly wouldn’t trade the beautiful weather for the gray, sub-zero winters I experienced in Illinois, I do sometimes miss the simple pleasures of autumn – the cozy sweaters and tall boots, the distant aroma of burning leaves, and that distinct, heartwarming feeling of fall.

A Taste of Fall, No Matter Where You Are
Last fall, before our move south, we embraced our northern locale by visiting a local orchard for an unforgettable apple picking adventure. We returned home with a bushel of incredibly fresh-from-the-tree apples and a box of warm, freshly fried apple donuts. Oh, my goodness! I’m not entirely sure which disappeared faster, but if truth be told, while the apples provided weeks of enjoyment, those donuts vanished in a blink! This year, with no apple orchards conveniently nearby, I was thrilled to discover large, gorgeous displays of Honeycrisp apples at the local market. Into my basket they went, with the firm intention of recreating those delectable apple donuts right here at home.
And that’s precisely what I have for you today: a recipe for Baked Apple Donuts that are utterly delicious. They are wonderfully soft and tender on the inside, boasting a serious cinnamon crunch on the outside. Each bite is packed with cups of freshly grated apple, perfectly balanced with the warm spices of cinnamon and nutmeg. Prepare yourself for the irresistible aroma and taste of my Fresh Apple Donuts!

Crafting the Perfect Baked Apple Donut Recipe
The journey to perfecting these apple donuts involved several delicious experiments. I played with varying amounts of apple, tried incorporating apple juice versus applesauce, and tested different forms of apple – from small chunks to finely grated. The biggest decision, however, was settling on baking versus frying. After numerous variations, I finally narrowed it down to this winning formula: a rich, moist batter brimming with grated apple goodness, complemented by a robust cinnamon kick. My philosophy is simple: if you’re going to put in the effort to make donuts from scratch at home, they should be distinctly superior to anything you could easily grab from a chain like Dunkin’. These are designed to be a homemade revelation, bursting with authentic apple flavor and a texture that’s truly special.
Why Choose Baked Over Fried?
While the allure of a fried donut is undeniable, choosing to bake these apple donuts offers a multitude of benefits. Firstly, it results in a lighter, less greasy treat that still maintains a wonderfully moist and tender crumb. Baking also means significantly less mess in the kitchen – no splattering oil or difficult cleanup, making the process much more enjoyable. For families, especially those with little ones, baking is a safer and more accessible way to create these delightful treats together. It allows the natural flavors of the apple and spices to shine through without being overwhelmed by the richness of deep-frying, offering a wholesome yet indulgent experience that truly captures the essence of fall.
The Art of the Cinnamon-Sugar Coating
My original vision for these donuts actually included a decadent salted caramel glaze, which I still believe would be absolutely incredible. However, somewhere along the way, I realized that sometimes less is truly more. I wanted to create a recipe that was approachable and easy enough to whip up for breakfast without requiring you to set your alarm for 5 AM. The result is a straightforward recipe, perfect for involving even the youngest family members. My two-year-old daughter enthusiastically helped me from the initial mixing almost to the very end. Of course, once the first batch emerged from the oven, her interest shifted from baking to eager sampling – and honestly, who could blame her? This simplicity led to the irresistible cinnamon-sugar coating, providing the perfect textural contrast and a burst of classic fall flavor without overcomplicating the process.

Are Baked Apple Donuts Healthy? A Closer Look
It’s important to be realistic: I’m certainly not going to label these apple donuts as “healthy” in the strictest sense, as the words “donut” and “healthy” aren’t typically found in the same sentence. *However*, they do offer some redeeming qualities! Each batch is packed with a generous cup and a half of fresh apple, providing beneficial fiber and natural sweetness. We also incorporate unsweetened, natural applesauce, which adds moisture and flavor without extra sugar. Crucially, these donuts are baked, not fried, significantly reducing their fat content compared to traditional versions. So, while they remain a delightful indulgence, you could certainly argue that they are a little better for you than many store-bought alternatives. Can I call them truly healthy? Probably not. Can I call them absolutely delicious? Without a doubt, yes!

Homemade apple donuts, packed with fresh apple and applesauce. Coated with a crunchy cinnamon sugar. Baked and perfectly delicious!
- Author: Carrie Sellman
- Yield: 22 – 24 donuts
- Category: ✽ ✽
Ingredients
- 4 cups all-purpose flour
- 4 teaspoons baking powder
- 1 ½ teaspoon salt
- ½ teaspoon baking soda
- 1 ½ tablespoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ cup unsalted butter, melted and cooled
- 2 eggs
- 1 cup sugar
- ½ cup buttermilk
- 1 cup unsweetened applesauce, from jar
- 1 ½ cup fresh apple, peeled and grated
For the Coating:
- unsweetened applesauce OR melted butter
- 1 cup sugar
- 1 tablespoon ground cinnamon
- dash of ground nutmeg, optional
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, whisk together flour, baking powder, salt, baking soda, cinnamon and nutmeg.
- In another large bowl, stir together melted butter, eggs, sugar, buttermilk and applesauce. Stir in fresh apple.
- Add 1/3 of the flour mixture to the egg mixture. Stir with a wooden spoon. Add another 1/3 of flour mixture and stir. Add remaining flour and stir just until combined. Be careful not to overmix.
- Spoon batter into a large ziplock bag. Seal and snip the corner off one end (about ½ inch). Squeeze batter into the cavities of a donut pan sprayed generously with non-stick baking spray. Fill each cavity 2/3 to 3/4 of the way full. To help donuts keep their pretty shape when baking, use a clean finger to gently even out the batter in each cavity and clean off the center knob of the pan. Bake at 375°F (190°C) for 12 to 14 minutes, until the tops of donuts spring back slightly when touched. Let cool in the pan for 5 minutes before carefully removing them to a wire rack.
- For the outside coating, combine sugar, cinnamon and nutmeg in a shallow bowl. While the donuts are still warm, use a pastry brush to cover each donut with a light coating of unsweetened applesauce, or alternatively, quickly dip them into melted butter. Then, immediately dip into the cinnamon sugar mixture and toss gently to coat completely. For an extra crunchy coating, you can dip them a second time. Let cool completely before eating, if you can resist! Best enjoyed the same day they are made for optimal freshness and texture.
Tips for Perfect Baked Apple Donuts Every Time
Achieving bakery-quality baked apple donuts at home is easier than you think with a few simple tips. Firstly, **do not overmix your batter**. Overmixing develops the gluten in the flour too much, which can lead to tough, dense donuts. Mix just until the ingredients are combined. Secondly, using a ziplock bag with a snipped corner (or a pastry bag) for piping the batter into the donut pan cavities is a game-changer. It ensures even distribution, keeps your hands clean, and creates beautifully shaped donuts. Avoid overfilling the cavities; filling them about two-thirds to three-quarters full allows the donuts to rise perfectly without overflowing. Finally, for that irresistible cinnamon-sugar coating, make sure your donuts are still warm when you apply the applesauce or melted butter and then roll them in the sugar mixture. This helps the coating adhere properly and creates that delightful crunch. Cooling them completely after coating will set the sugar and prevent stickiness.
